The olive mill – Giatra’s family residence– which has been the subject of this particular research, is located at the village of Agalas on Zakynthos. It is a semi-mountainous village, with a great olive oil production tradition, since the area of Riza, where it is located, is well-known for its olive groves and its soil quality. The Giatra’s building complex consists of some dwellings, the olive mill, one small edifice that housed the family’s kitchen and one more edifice that functioned as a storage facility. The structure of the building complex and the size of the olive mill were indications of the family’s lordly station. Construction of the building complex was completed in 1796 and according to documents it was an event of great significance for the village. The buildings are stone constructed with wooden tiled hipped roofs. The principal residence was a two-story edifice distinctly influenced by the Venetian architecture. There was a wooden internal staircase and a carved wooden roof. The materials used for building the complex were stone, lime, soil and cypress and wild olive wood.

This study is considering the feasibility of creating a contemporary agri-tourism farm and guest house. During their stay, visitors will appreciate the great impact of olive cultivation on the local economy and also on the natives, learn its history and moreover participate in the traditional olive oil production.

In addition to the preservation of the olive grove in its original form, a redevelopment of the surrounding area should be conducted by adjusting the water supply to the premises, a fence around the complex should be also designed resembling that of an olive tree and protecting the privacy of the residents inside the complex. The natural landscape on the west side of the property could be used as a sitting area by installing seats around the circumference, while a stairway enclosure could be built in the middle of the property so it would lead to the underground storage facilities.
